How do I wipe out the whole data before I send to someone who want it?

-delete all your personal files
-install an app that writes plenty of small files in the empty (but still occupied) space. ("eraser", "wiper")
-restore the initial os/configuration
-done !

or maybe step 2 and 3 in the other order

- Settings, then General. Scroll down until you see Reset.
- Erase All Content and Settings. ...

Just in case you tapped the button by accident, your iPhone or iPad will ask you to confirm the reset, and when you tap OK it will start the process.
