With the current developer restrictions you must use XCode, and you must use a natively supported language (Objective C, and C/C++ that you can run within objective C). So there are now legal as well as technical hurdles as well.

If you're interested in iPhone OS at this point you're best bet is to dig deep and take a stab at Objective C, because anything else is likely to be a waste of time in the end sadly.

Unity at the time is in the situation that its future isn't known to above mentioned point by ima (OS4 ToS 3.3.1, ToS 3.3.2 - discussed about in several hundred blogs++ and a 220page or so thread on the unity boards)
