Since upgrading to Mountain Lion I see many texteditors of mine (including MaxIDE, as well the "official" as the "community" versions) autocorrecting stuff.

Like (c) becomes © and more stuff like that.

Problem is, some source files of mine got broken this way.

I mean this ain't gonna work :)
C$ = "Hello World"
Print Upper©

On top of that, I regularly use fonts in my projects that don't even support these characters and I also have some bad experiences when transferring data to other editors that have sometimes a bad support for those as well.

There should be a feature somewhere to turn that shit off so that I only get what I type. There are tools which allow me to get these special characters in the rare occasions that I need them.

Problem is, I searched the entire system preferences menu and I didn't find it. Of course OSes often lack some logic when it comes to this. Do you know where that feature is, so I can turn it off?

You can turn this off in the System Settings under "Language and Text". Uncheck the appropriate option in the "Text" tab (or modify the settings as you like).
